Our classic Wild Pacific Smoked Sockeye Salmon is cured with a St. Jean’s family recipe mix of spices before it’s introduced to hot natural-hardwood smoke (barbeque style) in our Nanaimo smokehouse. It is sealed in a foil retort pouch that doesn’t require refrigeration until it’s opened–so it’s great for travelling!
