We take Vancouver Island-bred oysters and smoke them with natural hardwood smoke in-house in Nanaimo. When canned, we take care to ensure they retain their natural nectar, which leads to unrivaled taste and texture. History: St. Jean’s Cannery & Smokehouse was founded on smoked oysters! In 1962, Armand St. Jean started smoking pacific oysters at home in Nanaimo and sold them in local bars. They were sold in little plastic baggies with a card labled “St. Jean’s Smudgies Oysters.”
